How to spin the camera along its sight axis?

How do I make a camera roll? I.e., spin the way a bullet spins in flight, or the way the Earth spins to make day and night. No torus track, no donut track, NO TRANSLATION, just rotation. I'm really having trouble understanding why I can create a default camera and get it to do the same thing by using X rotate and Z rotate (edit actually that's when I frame an object; default camera does some other not-helpful thing if I don't frame the default camera to anything, then use z rotate).

Z rotate the camera, or if you are looking through it use the viewport control (ctrl(Win)/cmd(Mac)-right-drag on the rotate icon at top-right of the viewport).
Keyboard shortcuts U and O also rotate along that axis.
