Content Management Question, Moving to Other Categories

I love Smart Content, but I dislike Default and the way some things are categorized/lumped together.

I want my own system of Categories.

I swear there was an easy way to move or copy a product to a different category but maintain all the various bits (Wardrobe, Accessories, etc).  What am I forgetting?
