I have DAZ 4.6, and I know that DAZ has a cave prop available, but since I want to making lots of different caves, I don't want them all to look the same, just with different textures. I also just got Bryce, but I have no idea how to use it yet, so I'm asking: will it be possible with one of the two programs to make my own caves from scratch, or being a noob, would it be easier on me to bite the bullet and just buy the DAZ prop?

You need a modeling app which DS and Bryce are not. Blender is free, but a step learning curve, you could try hexagon sold here or carrara. Also once you start modeling, it's best to allow to turn off one side or the other to allow for camera space.
One can make beautiful scenery in Bryce, including caves. Those that know how tend to frequent the Bryce forum section of the forums.
There are videos uploaded to a few places including Youtube.com.
Google searches will find others as well.
When you create a 'terrain', using various options in Bryce you can change its shape a lot! Can make one for a floor, one for a roof, rough, smooth, etc. Add some clouds or water for more effects ... tons of fun.
edit: Did a quick test and yes one can export these terrains out of Bryce to import into D/S.
So one can either make some caves/parts of caves in Bryce and then use them in D/S.
Or set up the scene in Bryce and import in the D/S figures if so desired.
Bryce does great caves. Here's a piece of a render I did a while back; perhaps not my best work, but an example of what can be done fairly easily in Bryce (although it did take a long time to line the numerous little pieces up the way I wanted.). The stalagmites are terrains, stretched greatly in the vertical direction, and some or maybe all of the rounded bits were metaballs (there might be some other terrains and spheres mixed in in places). Someday I'd like to do another better cave render, I just have too many other ideas ahead of it at the moment.
Nice work Sean, I stand corrected. Guess I should have spent more time with Bryce when it was installed,
try Sculptris too
does realy nice curvy shapes, pushing into a sphere with the Grab tool etc gives you wild holey forms
