Is there a way to modify the bulk of the metrics rather than the five basic ones? It seems a shame to have all those stats and not be able to alter them.

Yes, in the Advanced tab of the dialogue you can set a property to control that measure and once that is done you can select it as a target. Care does need to be taken in selecting properties, as it's easy to set up a group that will work against itself.
