hi is there a tutorial or explanation anywhere for the surface tab so I can learn what all the options do?
I kind of get the feeling I could get better results if I knew what things did in detail.

It depends on the shader (and renderer), each shaders has it's own parameters, if you use IRAY there is some documentation on the standard shader at http://docs.daz3d.com/doku.php/public/software/dazstudio/4/referenceguide/interface/panes/surfaces/shaders/iray_uber_shader/start
If you buy shaders there is usually documentation included with them as a pdf.
If you use 3DL there is some information here http://docs.daz3d.com/doku.php/public/software/dazstudio/4/userguide/chapters/textures_surfaces_and_materials/start
Even if yoiu don't use 3DL it does explain what ambient/diffuse/specular parameters are and how they work, to some extent that is valid for IRAY also.
The best way to figure it out might be to create a simple geometry (sphere, box, cylinder), setup some light and play around with different surface parameters and see what they do.
