I'm making my own props and accessories using a variety if programs, namely Sketchup and Zbrush, but can't figure out how to assign anything more than a single color to them. For example a first aide pouch, how would I make the cross red on say a green pouch?

Are you UVmapping it or just creating a material zone?

two ways to do this, first off the simplistic way, make the cross on the bag a seperate object with it's own material zone. That way you color it whatever you want and color to ther objects (bag, etc) anything else you want

Second way and the most preferred it to UVmap the bag and then apply a texture to it with the cross on it along with any other details like stitches, dirt, blood, canvas material, etc.

For use in which application? Usually you need to UV map the model, if it isn't, and then create a texture to fit the UVs - which you can do, in a few steps, in ZBrush using PolyPaint.
