each Genesis model I select will either have a chest option and lack the hip option or vice verse in the shaping tub. Is there a way I can have both show up( the chest( breast and nipples) and the hip(hip volume and gluteus) )?

What tool are you using? The Shaping pane and the Region Selection tool might do that. If you check the Parameters pane you should see all of the shapes under the Actor group.
