How the heck do I change my screen name in the forums?? No option in my profile to do so, just looks like a random number attached to my first name.

It's in your account informatioon,  not your forum profile.  
That side of the site (store, wishlist etc) uses different software to the forum

So click on the little blue guy  up in the top right hand corner, next to the shopping cart   and then click on edit where it shows your name and email addy.  You will then get a screen like this
