How do you pan around the camera 360 degrees?

I was trying to do a simple animation with the camera panning around the character returning to the original position.

Then I realized it is impossible to do easily, or is it?

When I tried to fix the camera to the character by selecting point at, it flips upside down when crossing the Z axis.

If I tried to carefully move the camera around by only using the X and Z position sliders and the Y rotation, the movement was jerky, and the subject distance was all over the place.

Is there a way, to simply move the camera around a path? (Preferably a circle) Without having to manually set every frame as a keyframe?

Thanks!

PS: No rotating the character while the camera stays still is not an option, because of the lighting and environment.

Easiest way is to create a null object, parent the camera to the null and rotate the null 360 degrees.
