Also, why, when you're tyring to pose an object or figure does both the X and Z, or whaterever has gone worng, both do the same thing? The only way I can get out of that is to add a null and pose that instead.

    It's called gimbal lock - adding a null to control one of the rotations is one option, using the Viewport Gizmo to pose with the coordinate system set (in Tool Settings) to soemthing that doesn't depend on node orientation is another. This is why the advice on rigging is always to put the axis that is least likely to hit ninety degrees first, to reduce the odds of a lock.
