Ideal camera settings.

I remember reading a thread where someone gave some good settings for cameras (fov and so on) for portraits and full body renders, but I can't for the life of me find the post.  What are "good" settings for these things that avoid distortions and so on?  Is there such a thing or do you all just fiddle until your eye says it's all good?
