My new computer I bought goes insane with DAZ studio 4.12. It renders quick but the fans go into overdrive and it sounds like an airplane is taking off.  I try to turn off cpu rendering which works well in 4.11 and results in a longer render but also far less noise and cpu.  4.12 still uses a ton of fan, even when i select card only rendering. There is definitely a difference in performance between studio versions for me.

my 980ti runs at 85°C in some softwares rendering realtime (looking at you Unreal Engine4)

but I don't do it for extended periods, I can capture a lot with Shadowplay in a very short time doing that

    thousands of frames

I just assumed the graphics card would "slow down" or something if it detected it was getting too hot.  Do graphics cards not do this? lol, i always just ignored the temp warnings i get because i assume my cooling will keep it as cool as they can while the graphics card will stay within manufacturer's limit.

Yes they do. They don't always work perfectly. Nvidia cards are supposed to downclock slightly for every degree C above, IIRC, 60. But that downclock is not necessarily sufficient to prevent overheating.
