Licences that say not to alter or change products, does that include changing or making my own patterns for existing clothes or photoshopping on my own buttons or pockets onto a new material I have made?

For your own use you can make modifications. If you want to give them to others (free or paid) you need to start from the texture templates rather than an existing texture.
