Mac user switching to a PC for Daz advice needed

I'm a Mac user that is looking very soon to purchase a new computer for Daz and Iray reasons. So I have a chance to pick up a new Dell XPS. I configured one with an RTX 2070 Super and Core i7. It's like $1679 after coupons savings. I than confugured one with a 3070 and that one came out to $1899 after coupons. the 3070 config  has the same storage, cpu, ram etc. Would Iray see a big improvement with the 3070 vs 2070 Super? I am looking at the benchmarks right now but I don't see anything for 3070. I am doing animation in Iray just to add.

I do this on Mac now. 1 Frame: Min Samples 5 + Max Samples 15 + 1080 = 30 seconds per frame.

Also, would I be able to eventually upgrade to a 30 Series if I got the 2070 config at some point? Should I just take the plunge and get the 3000 series PC?

    I'm also in the middle of switching from Mac to PC and I've read a couple of times that there's a pretty big difference in speed between the RTX 20XX and RTX 30XX series. But obviously I'm not an expert at all so see what other answers you'll get.

    do not look at benchmarks because speed is irrelevant 

    what you should care about is GPU memory  or if your scene does not fit your GPU will be pretty useless

    at this day 8GB is a bare minimum

    1080 ti which has 11gb will be better than 2070 or 3070 and cheaper than marginally useful 8gb video cards
