I think I have a (basic) understanding of what geoshells are, but are they easy to make? If so how is it done?

you click the geoshell button and it adds one if that helps
So I just select the object then create geoshell and that's it? (I never even knew there was a geoshell button until you mentioned it).
Yes, you select an object and click create geoshell. that's all you need
In some way, geoshell is similar to iray instance except that you can apply different texture and turn off certain parts of it,
usually, we use shells to add an extra layer to the figure surface as if you want to add dirt or wettness or tatoos
