Help with PC build - which processor/video card and why

I have been struggling wanting to make a decision on which computer to buy. I primarily want to use the PC for Maya modeling and DS rendering. I'm less concerned with games, though being able to play them would be a bonus.
I keep researching and keep coming across people disagreeing for different reasons, so I'm curious to get some opinions here but also an explanation of why one is better over the other.
First: Ryzen 9 3900X or i9 10900K - more cores or better one core performance? I do a lot of modeling in Maya, so I wonder if single core performance of the intel would be better or more cores of Ryzen for rendering. If Maya will still work super well, I wonder regardless, if I would be better with Ryzen for rendering, because having faster renders I think is probably more important/less annoying in the long run. At the same time I want Maya to work. I also wonder that if it's about the same PCIe 4.0 and better upgradability make Ryzen a better choice anyway.
Video card: I'm struggling with this. I originally thought for Maya I needed a Quadro card, but that doesn't seem to be the case - the majority of what I've found seems to be that unless you need solid works or the guaranteed support, you really don't need that and I'd be better off with a faster card. So: RAM or cores? Definitely want a 30 series RTX card (if I can ever find it...). Need to stay around $800 or less. I thought 3080 was a good balance with the extra cores and 10gb ram. The 3080i I have a feeling is going to be too much money. Or is the RAM more important? I can go with 3060 or the 20 series and get more RAM...
I should mention, if I can't get the video card now, at least i9 has the onboard video card - not sure how great it is. It's that or my old GTS 250 until I can actually find one...
I'm seriously driving myself crazy because I keep bouncing back and forth. I know this question has probably been asked a lot, but most times I find stuff the answers are pretty old. Does all of this render well with IRAY is the other important thing...

I would go with Intel because of the history of not having compatibility problems and for the same reason, I would stay away from the ones with integrated graphics.
Imho Quadros may have a place in business environment, but ones paying with their own money will get better return with the 'consumer' models
The only thing is the intel one has the integrated video card. Although I guess maybe the other model without it is just as good I think it has an F after the number. You don't really have to use that thought right?
The ones using LGA2066 socket don't have integrated graphics, their model number ends in X or XE
Do you know what's different with the X series besides not having the integrated graphics? They seem to be more money. I'll have to look into it more. Thanks.
They are meant for the HEDT (High End DeskTop) systems and the related chipset (X299) has a lot more expandability and features than the ones meant for lesser systems.
