I'm trying to create the following image in Daz studio.

Is it possible to create the head where there is bumps/cracks with different coloring for various parts?

Not directly, no - you could use an external modelling application to create the additions and then use them within Daz Studio, probably as GeoGrafts, but Daz Studio itself isn't a modelling application.
