How can I make the VaVaVoom Hair look like it does in this promo image? I want to the right side of the hair to not be wrapped around the ear.

That image is just flipped from the first promo. There is no mirrored version of the hair.
Too bad, I guess I will return it for a refund. The promo image should be removed, as it is a misrepresentation of the product.
You DO know you can physically mirror-flip a prop by resizing one axis to -100% (minus 100%), right?
Can that be done with strand based hair? I've done it with polygonal hair, but not strand ;)
Did a short test with dForce Ingrid Hair by AprilYSH and it seems to work nicely when mirror-flipped. One probably has to check which part of the hair is flipped. In my example it's the "Ingrid Hair Base", not the "Ingrid dForce Hair" (which has no options for flipping/rescaling anyway) in the Parameters Tab. And of course the sliders for the "Hair Base" are hidden and have to be made visible first.
I just did a quick test. Select the cap in the scene and change the x scale to -100% and it switches the ear part to the other side. Problem solved.
If you do this, you will need to also flip the ear shield in the same manner.
What I want to do is to make the hair non-over or over the ear on BOTH sides at the same time - More Symmetric.
Your original problem of the hair not being able to be flipped like the promo was solved.
If you would like the side that is above the ear to drape over:
You can go into the scene and expand it. Find the invisible ear shield and delete it.
Select the hair (not the cap) in the scene, then click on the shaping tab.
Click on the "Clean Around Ear" morph. Select the cogwheel in the upper corner of the slider, and change the minimum to something like -50.
Dial it in the negative to bring the hair out over the ear some.
Run your simulation.
It will probably not be symmetrical. The hair is not designed to be.
Just have to say the hair drapes so prettily! My old potato computer handled it just fine, simulated and all. :) Please keep making more hair!

I could try your suggestion, but I have deleted your product from my machine and am waiting for my refund/credit.
I'm sorry, but I don't think that anything I have said in this thread or any other for that matter warrants this kind of response. I have done nothing but be helpful and kind.
If its any consolation, your helpfulness and participation in these formus makes many of your products an auto-buy for me. It's amazing to know that if a product goes over my head that the creator herself will step in and help.
PS I love your backlight hair shaders, they let me use a lot of older, "less-real-looking" hairs in realism renders.
I believe you are trying to help me as you have done so in the past, but in order help, you have to understand the problem first. If you want me to try your latest proposed solution, can you post a rendered image please? If you results look good to me, then I will notify DAZ and ask them to hold my refund request, so I can restore your product to my system and give your suggestion a try.
My responses are honest (albiet blunt) and my dealing is in good faith, and if you do not think they are warranted, then there is nothing I can do about that.
I have several of your products that I am satisfied with - That does not change.
Honestly the amount of extra being asked for could be making a whole new hair style :D
maybe next one will be the symmetrical style you prefer. I really do love the way this particular one drapes and already posted a picture of how nicely it falls and that was a very short sim, a longer one would let the hair fall even smoother if i wanted it to, but i liked the look with all the whispy strands. Very ethereal.
There's already a great deal of use in all of Chevybabe's hair, with movement morphs for use with simulation or not, and more hair or not, and so on. Not to mention customer service that exceeds what's normal and her amount of time put into tutorials and help. I think she's already put in 300% on this hair, to be totally fair. I'd far rather see her working on the next great hair.
If you're REALLY desperate to make it symmetrical, how about rendering the hair twice, one one way and one mirrored, and compositing together. it'd be faster than asking Chevybabe to recreate the hair and morphs for you. :)

I never wanted perfect symmetry, I just wanted to bring the "around the ear side" forward and "over the ear", which the promo pic made me believe was possible. Anyway the issue is closed and the point is moot, as DAZ has issued my refund.
