Iray Server??

I see in the render settings that there is a server for Iray. Does that mean the program goes online to render in the cloud? Or is it some kind of internal element?

There is not "a" server for Iray. It's possible to render using a server, but it requires either using an existing render farm (Daz's own Jack Tomalin runs one such service) or paying for a license for Iray Server and running that on multiple computers you own.

It depends how you work. Fo large scenes your PC must at least be able to show them in the opengl viewport. Then you can send to the farm for rendering. Long story short, you don't need a nvidia card but you need anyway a good cpu and lot of ram. You can also render iray on cpu without the denoiser, of course it's slow.
