Which would be a general better startegy? Use DAZ assets to create characters then use the DAZ->Unreal bridge to put them in an environment made in Unreal OR just simply use DAZ for both?

If only for licensing purposes, it makes far more sense to put Daz characters in an Unreal environment.
regardless of which route you take, remember that you need an interactive license purchase for each asset you use from the DAZ store unless your game is a 2D game.
Buy your stuff at Unreal Marketplace its already licensed for the game engine and already rigged for the game engine. Retexture to make it unique. Same for the Unity Asset store.
