RAM question

My intentions were that while I used my GPU for Iray, I would dump scenes with larger data to my motherboard RAM.
Yes I'm aware this means I will have to take the hit for render time. How badly, I don't know.
So as it happens, I had bought 32 GB of RAM. But I didn't get around to building my computer for a long time. One stick of 8GB was bad.
So essentially I'm left with two options:
I'm stuck with two dimms, 16GB dual channel or trying to do 3 dimms 24GB single channel. (less the resources usage in any case, obviously).
Until/if ever I can get four compatible ram sticks to get the full 32GB of all four dimms dual channel.
(Comp has gotten old and obsolete before I ever completed it. lol)
So I guess I'm asking which would be preferable?
16gb dual channel or 24gb single channel?
What matters more? Total overhead of memory size or does such an arrangement cause a major slow-down, especially if reloading a scene?
