Can't Erase Any Part of Weight Maps

Title should be self explanatory - I'm rigging a model for the first time, but weight mapping is nigh-impossible because I can't erase. From what I understand, you're supposed to hold down Alt and use the brush to make it an eraser... but when I do that, it still only works like a normal brush, adding instead of subtracting. The maps aren't unresponsive since I can still add. However, there's no blue coloration anywhere either - just gray. Is this just some random, specific bug, or am I doing something wrong?

The grey is vertices that aren't weighted - in order to reduce memory DS switched to leaving unused vertices blank isntead of making them explicitly zero. As for the erasing, check the modifier assignment in Window>Workspace>Customise at the bottom of the dialogue.
I'm not seeing any "Customise" or "Customize" option/button/menu in the Window>Workspace menu. There are two items labeled "Workspace" under "Window," but their sub-options are just "Select Layout," "Save Layout As," and "Delete Layouts" or "Off Screen Pane (Tab) Groups," "Enable Activity Bar," and "Orient Tabs Along Top," respectively.
If you haven't reloaded your layout or updated the menus recently you should - but you should also check the Edit menu for the Customise command.
