Trying to locate a file that stores categories and their files on my hard drive

What path on my hard drive would I be able to find a folder, a file or series of files that stores categories and their corresponding files?
The reason I ask is because I would like to find such folders and/or files in case I decide to back up such files in the event that I may need or want to upgrade to a newer version of DS or even do a fresh reinstall of Windows 11.

The data you mentioned are stored in cms ContentCluster folder (postgreSQL database) in %appdata%\DAZ 3D\cms
You just need to back up this folder to somewhere, in case if you go for a brand new installation of Windows or DS migration purpose.
Then for a migration, copy the cluster folder to the same location in the new system, configure you DS Libraries in Content Directory Manager, everything will be there, simple and fast.
