Is there information on how to use 'Paper and Writing Shaders for Iray'?
I thought it was a product that might allow me to create my own document props- even add my own print.
...but it looks more like shaders, only, now that I have downloaded it.

They're just shaders with texture maps. But you can just prepare a mask map with your writings / prints... as per the one in the slot of Diffuse Overlay Weight, and replace the original map with yours.

You can make your own text, just put white text on a black background on a square image and plug that into the Diffuse Overlay Weight slot.

Is Diffuse Overlay Weight in surfaces? How would I plug it in?
Check the screenshot I posted above... In Surface panes, the author already placed a black/white texture map in the slot of Diffuse Overlay Weight. You just need to replace it with yours ...

Get yourself a caligraphy pen & you'll be well away creating your own text.. Can be as simple as a dip pen and a bottle of ink.
Remember, you don't have to show writing only in one colour, there are dozens of shades these days and inks can be sparkly or shimmer with incident light angle, just need to transfer that tho the 3D model.
