Is there certain reason why daz shop doesn't use a category based on ethnicity?

    That sounds like a great idea for organizing my characters, one for shape and one for texture, with notes on textures for makeup options and notes for shaping options.

    Will be interesting to see what each character looks like with cartoonize applied at different % as well.

    I suggest you go back to some old geography books prior to the 70s with photos of traditional folk people and clothing. Use the DAZ Genesis 9 DAZ Original main morphs and materials products add ons to approximate. The clothing and hair will be the big problem. The environment too, although the environment generator by Howie Farkes can help for some of them. Eye opening that everyone used to not have such things as a Walmart, television, smart phone, and internet near by. So quaint.
