With Centuars, Pegasus, Unicorns, Dragons and other mythical creatures, not to mention the 4 armed humans some have made, I'm surprised no one has made Odin's 8 legged horse, Slepnir. This beast would be a great addition to mythical creatures.

YES! With both male and female options like the G3 version has, not just another one of these things where the girls get all the add-ons! Would love to see some proper double joints for the elbows and knees, too, if possible.
In addition to the rendering possibilities, I'm planning out an IRL, dark-skinned, heavily tattooed, male BJD of a character that I've also been working on a G8M morph for. Having what amounts to a digital model with the right skintone for experimenting with different kinds of outfits, faceups, tattoo placement and so on, would be incredibly useful.
+3 And not just jointed at the hips, knees, ankles, shoulders, elbows, wrists and neck. Would be nice if they included the jaw, eyelids and all the fingers and toes. Eldritch Cellar made one for Poser and there are morphs on the finger for different shapes. The entire model had a lot of morphs so you could make the doll look the way you want. After making the jointed fingers he hasn't worked on it since, which is a shame. If someone took inspiration from him, you could have either a BJD or a Puppet.

Since some in this thread have already mentioned "sexy" and "skimpwear" (for guys), I assume it's okay to mention the same for girls. I mean, if you do a search for, say, high heels for women, there's only a handful available (like 2 pages worth), and many of them are from (many) years ago. And in terms of sexy skimpwear for women, at best it's very limited and, shall we say, "safe". I guess some more artistic freedom would be nice.
Aside from that, I'd love to see more quality and varied Iray materials, especially fabrics.
And far fewer sword fighting zombies...
To be fair, the store search is cripplingly broken. Visiting the Shoes and Footware section for G8F, though, something like 85 out of 136 results were high heels of some description, many of them ankle-breakers and/or stilettos (I excluded super low heels, cowboy boots, etc.). There were lots of outfits that I know for certain have heels (and really shouldn't) that aren't in that section, too. Might be worth having a browse in footwear and also whatever clothing genre you're interested in? There are tons of them.
The R's are where it's at for the "sexy" stuff. No shaming, I buy more "artistically free" stuff for my guys from both places (and there's waaaaay more of it for the girls). It's just that Daz'll never do it. New underwear packs for the guys can't even have jockstraps anymore IIRC. Too much cheek, I guess. And there was a discussion about why all the newer male loincloths follow the same sort of long style. I'm grumpy about it.
Seconding the Iray fabrics. I would especially love to see Iray shaders for realistic medieval fabrics. Correct colors, accurate brocades and not just "that looks complex, let's go with it" patterns, etc. More wool! Accurate trims! Sets that follow sumptuary laws! (I wish I had any sort of knowledge or skill with making shaders because if ever I dipped my toes into selling, it would be here.)
Also just... everyday, modern fabrics. Things like cotton jersey for t-shirts. I don't think we have that specific one here? Or at least, I haven't see it, but I need it.
A really good shader for slubbed dupioni silk.
...galvanised steel and aluminium shaders.

the unflateable rigged amoeba.
vorpal bunny slippers
quitter socks.
baggy pajamma shorts

More props and poses for hockey (that's ice hockey and NOT field hockey).
More classic & vintage American cars and TRADITIONAL STYLED hot rods.
Have you checked out 3D classics over at Rendo. https://www.renderosity.com/rr/mod/bcs/vendor/3DClassics He is in the process of changing his classic cars over to Iray. A really great collection. If you see a model of his that is in poser format, or other type, just message him and enquire if he would be willing to release a daz/Iray version, as he seems open to requests.
Cat 8 !!!! - that's my holy grail
Then I'd also like to see:
A parrot (I know there's a cartoon but I want a realistic one)
More scifi male clothes which are not space suits or military body arms
Wagons to the amazing Spirit of Punk locomotive. The steam punk theme has been coming and going here quite freqwently, but still no wagons

Yes I have. And I've purchased some. He's a fantastic 3D modeler.
The Multi Dress system https://www.daz3d.com/dforce-multi-dress-system-for-genesis-8-females comes with loads of basic cotton/etc materials and shaders (I mean it's more epxensive than a usual shader pack, but you can use it to make loads of stuff too). It's what I use for basically everything like that.
Duponi is unevenly patterned, so would be a bit more difficult as a shader. Buuut, could probaby make one with a normal silk and an overlay (hmm..).
...I have those but no glavanized effect,
I don't know if it's possible, but something that could help weight map non-dForce hair into dForce hair. I've watched every tutorial out there on how to do it, but it never seems to work for me. It either slides off the head still even though it's all painted grey, or something happens and it freezes after four frames.
You mean something like this? https://www.daz3d.com/dforce-master-hair-simulation-presets-for-dforce-cloth-engine
I export the hairs and edit them in another software to create a new surface at the roots I can set the simulation to zero on
it can be a prop as dforced anyway
I select the root vertices in the UV view to create the new surface
A Sewing Machine, there's a sewing basket, but no machine, Compatible with dforce clothing.
Nope, I have that and have tried it at length, you have to weight map the hair still which is what I just can't seem to make work. I will say I love to use this product with hair that's already made for dForce, it works like a charm.
Hockey poses ;)
+4 (including the other suggestions!)
Have you tried this free one? It's a bit fiddly, but it works.
I have that one Luciel, though haven't actually tried using it yet. Would have been nice if the fingers were jointed as well.
I guess it's normal for BJDs to pretty much always have solid hands like those. Though as they're usually swappable for different poses you could easily get away with using different hand poses even without joints. Though lack of joints doesn't usually stop most doll people characters moving in various things.
Cow tail attachment for my huldra OC
traditional Noh masks
Ken Gilliland over at Hivewire had multiple parrot packs in his Songbird Remix arsenal, and I believe he's moving basically all of his stuff over to Rendo. Might want to check there!
